It’s soup season! I had one bunch of kale in the fridge and needed to use it before it went bad. Here’s another “souper” easy meal to put together!
you will need:
1- 6 quart pot
1 package of spinach, fontina and garlic chicken sausage from Trader Joe’s.
1 bunch kale or more, depending on how much you like
1 large onion (not red) diced; I used 1 cup of frozen onions
1 tsp chopped garlic (I use the pre-chopped garlic from a jar)
1 ½ tsp. olive oil
5 cups of chicken broth (I used the Better than Bouillon brand)
1 tsp. of dried basil
1.5 tsp. dried oregano
1- 14.5 oz. can of diced Italian flavor tomatoes, un-drained
1 bag of frozen cheese tortellini (I bought mine in the frozen section at Fred Meyer).
Freshly grated parmesan cheese
salt & pepper to taste
1.) Slice the sausages. You can cut them however large/small you want the sausage pieces to be. Set aside.
2.) Chop the kale. I chopped the leaves off of the hard stems. Set aside.
3.) In a large pot, combine onions, garlic and olive oil. Sauté for 5 minutes until the onion is soft and translucent.
4.) To the pot add: the chicken broth, basil, oregano, the can of diced tomatoes, tortellini, kale and sausage.
5.) Bring to a boil for 5 minutes, continue stirring.
6.) Reduce the heat to simmer. Cover and simmer for 10 or so minutes.
7.) Add 2 tablespoons of grated parmesan cheese and stir. Add salt and pepper to taste.
Ladle into bowls. Enjoy! Serves 6-8.
